Recipe: Coconut and Nut Energy Bar

This is a simple recipe - only a few ingredients and easy to make, but a really neat way to package up an energy-rich, nutrient dense meal for consumption on the move. I made it for the first time to take on a long mountain race recently, and it was so good I had to share the recipe. Enjoy.

Thanks for this, I needed a Lara Bar replacement. Creamed coconut, not sure if they carry that at whole foods.. where did you get yours?

I got it from the market, but it's everywhere here in the UK. You will definitely be able to get it - if not at Wholefoods (though I would be surprised if they did not stock it) then at any shop with Eastern influence. It comes in a block about the size of a packet of cigarettes. Hope you track some down.

Hello. I can't help noticing, in the video, that you're using what looks like a Teflon-coated cooking pan. If that's correct, please consider switching to cast iron cooking pans instead, as Teflon has been alleged to be incredibly unhealthy. Otherwise, very nice video and lovely blog. Thanks for the tip - do you have any good links to share? I did a bit of googling and am very interested in this, but would like to be sure I have all the facts before I do anything drastic!
